Zuccini Everyone Likes!
I've never liked zuccini until one day a vegetarian friend came over for dinner and I threw this together for him. When he was eating it he confessed that he's never liked zuccini and that this was the first time he ever did! So if two people who didn't like zuccini could be converted I figured there might be others out there!
1 Zuccini
3 tbsp olive oil
2 garlic cloves
1/2 tsp salt
1/2 tsp pepper
1/4 cup lemonade
Note: For a low fat version - use 1/2 tbsp oil and when you add the lemonade also add 1/4 cup of water so the zuccini doesn't stick to the pan and it cooks through.
1. Using a fork score the zuccini's skin to make it look like a zebra stripe. This is for decorative purpose only and is an optional step.
2. Turn stove onto medium-high and heat olive oil in a large frying pan.
3. Slice zuccini into 1/4 inch thin round slices.
4. When oil is hot add zuccini and garlic. Sprinkle salt and pepper on top.
5. Add 1/4 cup of lemonade.
6. Sautee zuccini until it is soft, approximately 5 minutes. Serve warm.

Fruit Smoothie
1 orange, peeled
1 banana, peeled
1/4 cup pineapple (fresh preferred, but canned will do)
1 cup ice
1/2 tsp sugar (optional)
Blend all ingredients. If fruit is lacking sweetness add 1/2 tsp sugar.
This is one of my all time favorite drinks - it is so delicious and healthy!

Easy Homemade Marinara
Marinara:
4 tomatoes
1 can tomato paste
4 cloves garlic, minced
2 teaspoon extra virgin olive oil
1/4 teaspoon oregano
Dash of Salt
2 tablespoons white wine
1/2 tsp sugar
1. Finely dice tomatoes, set aside.
2. In frying pan on medium heat saute garlic in olive oil.
3. Add diced tomatoes, paste, oregano, sugar, salt and wine.
4. Bring to a boil, then reduce heat and let simmer a couple minutes.
This tastes so fresh and delicious!

Oolong Tea Bag
Water
2-3 tsp Sugar
1/4 cup Pomegranate-Cranberry Juice
1. Boil water with tea bag.
2. Add sugar - stir.
3. Pour over ice.
4. Add juice.
5. Stir and enjoy!

1/2 tsp. salt
2 eggs
1/2 cup oil
2 cups buttermilk
1/2 cups raisins - optional
1 cup Nabiscco 100% bran
2 cups Kellogg All Bran
1 cup boiling water
Combine all ingredients as listed in large bowl.
Mix well.
Fill muffin tins 2/3 full.
Bake 425 degrees
for 15 minutes
Batter will keep six weeks in refrigerator.

2 cloves of garlic crushed
1/2 red bell pepper diced
1/2 onion
1 can tomato sauce
Salt to Taste
Pepper to Taste
Chicken Bouillon to taste
2 potatoes peeled and sliced into chunks
Soup Noodles (optional)

2 LARGE onions
2 teaspoons olive oil
4 cloves garlic
2 cups fresh baby spinach
1 teaspoon fresh lemon juice
Salt
2 slices of sourdough, cut into bread crumbs
2 ounce crumbled feta cheese
Cut onions in half. Place the onions in a large saucepan and cover with water. Bring to a boil and cook until the onions are partially tender, about 15 minutes.
Preheat the oven to 350 degrees F.
Scoop out the center of each onion half, leaving a 1/4 inch shell. Reserve the centers.
Spray a baking dish with non-stick pan spray. Place the onions in the prepared dish, hollowed sides up.
Chop the reserved centers of the onions. Sauté in oil with the garlic in a medium saucepan until tender, about 5 minutes. Stir in the spinach, lemon juice, and salt. evaporates.
Remove from the heat; stir in the bread crumbs and cheese.
Fill the onion shells with the spinach mixture.
Cover with foil and bake about 20 minutes. Serve hot.

1 dash of lemon juice
1/8 tsp fresh ginger
ice cubes
1/2 peach
2-3 tsp sugar (or Splenda)
Directions
1. Make cup of tea in microwave.
2. To it add ginger and sugar. Mix. Remove piece of ginger.
3. Pour over ice.
4. Add chopped peach and a dash of lemon. Stir and enjoy!

Spinach Omelet
* 2 eggs
* 1/2 cup torn baby spinach leaves
* 1 1/2 tablespoons grated Parmesan cheese
* 1/4 teaspoon onion powder
* 1/8 teaspoon ground nutmeg
* salt to taste
* Pam Olive Oil Spray
1. In a bowl, beat the eggs. Season with onion powder, nutmeg, salt. Stir in the baby spinach and Parmesan cheese.
2. Coat a frying pan with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes.

Perfect to serve for a bruncheon
And because it cooks so quickly it makes the spinach very flavorful and not overcooked (wilted) with just the right amount of bite left to the spinach
2 eggs enough for not hungry person - make with 3 eggs for hungry person
Also light enough for upset stomach!!
Important use pam - it makes the omelet fluffy somehow!!
